Easter Weekend

    We spent most of the Easter Weekend with friends cooking. 

    The husbands took turns to cook meals for the girls so we could have some "time off". 

    On Good Friday Percy made pancakes and savoury mince, on Saturday Dirk made Nazi Goreng (a Indonesian dish) and on Sunday it was our turn.

    Riaan made an awesome bacon and salami  Pasta with creamy cheese sauce and I made a side dish called Gibanica (pronounced Gib-a-nee-zah).

    Man, it was the shizzle!!!  I got the recipe from a Yugoslavian friend a while ago and had never tried it.  I thought it was the perfect opportunity for everyone to try something "different".  Its so easy to make and fairly cheap too.  I will certainly be making it as a side dish at braais (aka barbeques) in future.  Here's my version of the recipe:

    1 tub Original Feta Cheese
    1/2 tub Black Pepper Feta Cheese
    600ml Bulgarian Plain Yoghurt
    1 tub smooth cottage cheese (I use Philidephia)
    50ml butter
    Packet of Phyllo Pastry
    10 Eggs

    Crumb Feta Cheese into a Bowl
    Mix in the Yoghurt, Cottage Cheese and 8 eggs

    Grease a flat baking dish
    Lay down 3 layers of pastry and let the dough flop over the sides
    Add a layer of the mixture
    Continue layering until you fill the dish.
    Place 3 layers of pastry on the top and fold the first bottom layers to make an "envelope".
    Mix the remaining two eggs and a little milk together and brush on the top,
    Poke a few holes in the top

    Bake in a pre-heated oven at 180 degrees C for about 40 minutes or until the top goes golden.

    Its yummy hot or cold!
